Well... because I can't plan for crap, I ended up with 9 heads of lettuce to wipe out this week (between two people) - three hearts of romaine and 6 heirloom lettuces. The "Salad Experiment" is officially on. Sunday, I washed, chopped, spun and dried my greens and put some in a Foodsaver Produce Saver container (totally crap, save your money) and then filled a bunch of jars (easy transport to work) and vacuum sealed them up.

Yesterday, I ate my container of salad with a little mayo and 2 little packets of pickle relish mixed up with an envelope of tuna. It was very good.

Last night, my Mom bought us a Rotisserie Chicken, so I shredded the meat off of it, tossed it with some black beans, corn, a bit of ranch, and a bunch of greens. It was tasty.

Today, I had all the fixin's for an awesome Taco Salad (leftover taco meat, salsa, cheese, sour cream, crumbled chips), and I mixed it all up just in time to discover that the sour cream was bad, thus pretty much ruining everything. :-( I'm bummed. It had such great potential. I'm impressed, the greens are still fresh as daises, taste great, no complaints, but note to self: always sniff test sour cream before mixing it up in the salad. *sigh*

Tonight: I'm helping some friends unpack (they're moving to Parker - WOOHOOO!!!), so it'll be a break from salad, but tomorrow, I'm open to ideas for something new to try...

Cobb Salad?

I like my salads pretty simple: toss with olive oil and balsamic vinegar, top with shaved parmesan or goat cheese, almonds, and either mandarin oranges or dried cranberries....with some kind of protein to round it all off.

Another simple favorite would be: baby arugula, tossed in lemon juice and olive oil, top with shaved parmesan, and sometimes topped with toasted pine nuts.

Both go well with any kind of protein....

I'm sure Google can tell me, but what typically goes in a Cobb Salad?

Hmmm, maybe shaved parmesan, croutons and maybe some extra crispy turkey bacon? That sounds good.

Yep, Cobb Salad is a bed of greens topped with chopped hard boiled eggs, chopped tomatoes, chopped ham and/or turkey, and bacon bits (you can make it turkey bacon if you like, but because some turkey bacon has a higher salt content than regular bacon, it's not better than real bacon), and other chopped veggies....
